A woman floats on an avocado boat, reaching for her reflection as the sun sets. “Avocado” is one of 23 paintings in my series Women Dancing with Vegetables. I am on a mission to transform our perception of “healthy eating” from boring and burdensome to joy and delight. When we eat vegetables and fruit full of life force, we infuse our bodies with vitality.
